Clam Chowder
Resembles Manhattan more, I'd love to see the reaction of some old Mainer trying this. It's damn good
Bring 8 quartered potatoes and 2 diced tomatoes to a boil in 1.5 qts water, add:
- 4 diced red hot thai chilis
- 1 can of roasted Green Chiles
- 2 red peppers (diced)
- 8 cloves to 1 bulb diced garlic
- a stick of butter
- half bag of frozen corn
- lots of paprika
- garlic salt and salt to cover
Bring back
up to a boil for 5 minutes, take off the heat and add a pint of milk
and the clams. It's good by itself or you could you could serve it over
wild rice or something.
For the Clams, take a 10 inch bowl
pour boiling water over them for just a minute (to make them open up),
then pour cool water over them so they don't get tough. cut up and get
rid of any entrails. Alternatively you could use 3 cans of pre-cooked,
diced clams.
